A coffee's final quality separation occurs during the grading and sorting portion of the process.

At this point the beans are further subjected to a variety of tests, and the focus is directed to a coffee's size, density and color. There are a number of different techniques that are applied by various mills, however each attempts to further cull out the finest quality coffees from any growing region or farm.
